Winter at Stillwater

The rain is coming in sideways. The wind is howling up from Bass Strait unimpeded on its journey through Port Phillip heads, creating white capped waves on the lake, a reflection of what is happening out on the bay. The waiter pours your glass of Estate pinot as the slow cooked crispy pork belly balances precariously on the end of your fork. A thought crosses your mind, “Why shouldn’t I have the pudding for dessert...?” Welcome to winter at Stillwater, a season where things slow down but at the same time really heat up in the kitchen. It is a time of slow cooking, braising, letting the chefs run with their imaginations and come up with unctuous, sticky creations that “I know I shouldn’t, but.....” as everyone looks for comfort food and people are a little less self-conscious about what they eat.
